blueberry cheesecake smoothie

You’ve probably heard the term “eat the rainbow” to suggest that people maximize their nutrient intake with a variety of colorful fruits and vegetables. I’m reminded of it when I make this smoothie, as its rich purple color is unlike anything else in the palette of my other typical foods. Health-promoting flavonoids in the skin of blueberries are responsible for their rich pigment.

Blueberries are being studied for their impact on inflammation, cognitive function, and the cardiovascular system. As with the strawberries my strawberry cheesecake smoothie, the blueberries in this smoother offer a lower glycemic index than many other fruits, meaning they have less of an impact on blood sugar.

While you enjoy this filling, sweet and slightly tart smoothie, you’ll be treating your body to the following nutrients and more:

blueberry CHEESECAKE smoothie

Ingredients

  • 1 cup organic blueberries

  • ½ cup Greek yogurt

  • ¼ cup unsweetened coconut milk

  • 1 scoop Vanilla Vega Protein & Greens (or another vanilla protein powder)

  • 1 tsp Stevia (I prefer Truvia brand)

  • ⅛ tsp sea salt

  • ½ tbsp lemon juice

  • 1 tsp real vanilla extract

  • 12 ice cubes

Instructions

  1. Add all ingredients to a blender and blend until smooth.
